I love a good stir fry, it always seems to taste better when I use fresh vegetables, so this recipe I made it just like that, with fresh vegetables. You could certainly use frozen broccoli though, if you prefer.

The chicken, mushrooms, and broccoli get seasoned and cooked to perfection with freshly minced garlic, soy sauce, and rice vinegar. This one is sure to stick into my weekly dinner menu!

Yields 4 servings of Keto Chicken, Mushroom, & Broccoli Stir Fry

The Preparation

  • 2 tablespoon unsalted butter
  • 3 tablespoon avocado oil
  • 12 ounce boneless, skinless chicken thighs
  • 200 gram shiitake mushrooms, halved
  • 14 gram broccoli
  • 2 teaspoon fresh garlic, minced
  • 3 tablespoon soy sauce
  • 2 teaspoon unseasoned rice vinegar
  • Salt and pepper to taste

The Execution

1. Measure out and prepare all the ingredients. Dice the chicken.

2. In a frying pan over medium to high heat, heat the butter and avocado oil.

3. Add the diced chicken. and cook until brown.

4. Add the mushrooms and broccoli to the frying pan. Cook for about 5 minutes until everything is done.

5. Season with minced garlic, soy sauce, and rice vinegar. Stir until combined well.

6. Season with salt and pepper. Serve and enjoy!
