These can be meal prepped as well! Feel free to double or even quadruple the recipe and then split the pudding into jars to keep for the week. If you’re not a fan of almond milk (or have something else on hand), practically any low-carb milk will work for this. The Preparation

  • 1/2 cup canned coconut milk
  • 1/4 cup unsweetened almond milk
  • 2 tablespoon chia seeds
  • 1 ounce vanilla protein powder*

* If using unflavored protein powder, you can add in 1/2 teaspoon vanilla extract and sweeten to taste.

2. In a bowl or container, add all of the ingredients.
