Who knew avocado and tuna would go so well together!? I’m in awe of just how delicious this salad is. It has a mix of strong flavors complimented by the tart lemon dressing. Not to mention, it requires NO cooking and can be put together in just a few minutes!

For this salad, I used an English cucumber, but if you have trouble finding it, you can use just a regular one. It should be fairly large, roughly 8 inches in length so that you can get enough for this recipe. You can also add in some red onions if you’d like but be careful – it will up your carb count slightly!

This is the perfect side salad for summer BBQ’s or you can just eat it as your main dish for lunch. You can double or triple the recipe easily if needed, depending on how many you’re cooking for.

Yields 2 servings of Tuna Avocado Salad

The Preparation

  • 1 medium avocado, chopped
  • 1 medium english cucumber, chopped
  • 1 can tuna flakes or chunks (approx 120g)
  • ¼ cup cilantro, chopped
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • salt and pepper, to taste

The Execution

1. Place the first 4 ingredients into a salad bowl.

2. Drizzle with olive oil and lemon juice.

3. Toss the salad and serve!

This makes a total of 2 servings of Tuna Avocado Salad. Each serving comes out to be 303 Calories, 22.6g Fats, 5.2g Net Carbs, and 16.7g Protein.
